for batter:

1 cup (120 grams) cake flour
1 cup (250 ml) milk
1/2 cup (125 ml) water
1/4 cup (50 grams) granulated white sugar
2 eggs
pinch salt
vegetable oil (for cooking)

for filling:

6 apples, 1 1/2 tbsp(20 ml) lemon juice
1tbsp lemon zest
1/2 tsp ground cinnamon
2 tbsp unsalted butter
6tbsp (70 grams) sugar

1 cup (250 ml) creme fraich (or sour cream)
3tbsp confectioners’ sugar
